It’s a Gourmet restaurant situated half way from the village of Gassin, surrounded by the finest Gassinois vineyards with a beautiful view of the Mediterranean Sea (Golfe de Saint-Tropez). Held since two generations by the Mouret family, you will discover refined cooking with specialities of the Provence in an exceptional area. The restaurant has the elegance of a country house of Provence. As soon as the weather allows us, the lunches and dinners are served outside on the panoramic terrace. It is a special area located between Saint-Tropez, Ramatuelle and Sainte-Maxime. The establishment is referred in the best gastronomic guides of Provence Riviera.

 

Seasonal Provencal cooking

“I did not want to revolutionize anything. I brought my knowledge and style while keeping some great classics from my father. My recipes are inspired by the typical South of France cooking style, yet follow the seasons as I like to keep the product natural and accompany it with seasonal vegetables, aromatic herbs, citrus fruits or mild spices. I attach a lot of importance on sauces as they bring to each one of my dishes, a supplement of flavor and a note of colour to the plates.”

A unique moment

As soon as the beautiful days arrive, the meals are served under the soft foliage of our centenarian oak-trees, the tables are voluntarily spaced for more intimacy, the sight is sublime…the vineyard… the sea (Golfe of Saint-Tropez)… the hills of “Beauvallon”. Here, the days are unique. The luminosity of the seasons and nature give to each meal one single and privileged moment. The atmosphere is cordial; it is a restaurant of charm, the decoration is refined and has the elegance of a Provencal country house. Our place is appreciated for family and friends meals, or for a romantic dinner next to the cosy fireplace. “La Verdoyante” remains an authentic, peaceful and harmonious place, far away from the not always wanted glitter and glam of Saint-Tropez.

 

Family history

“This old wine farm built around 1890 and belonging to my family for generations, was transformed into a restaurant in 1979 by my father Fernand Mouret cooking Chef and my mother Mireille, daughter of Lyonnais cooking Chef. My brother Julien Mouret and I grew up at ‘La Verdoyante’ and we quickly caught the passion of the kitchen and made it our trade. In 2004, after 25 years of good and faithful services, my parents wished to withdraw into retirement, so it was only natural that I return to ‘La Verdoyante’ after spending ten years in the kitchens of some of the highest standing gastronomic restaurants to follow my passion and improve myself. This is the way I took over the family restaurant, accompanied by my wife Berenice.”

True to his style, Chef Eric Canino remains at the helm of a restaurant reputed for its culinary creativity and offers cuisine as light as a gentle breeze under the immaculate white sail shades on the terrace, overlooking the Mediterranean.

Initially chef for Michael Guérard prior to becoming Executive Chef at La Reserve Ramatuelle, Eric Canino plays with the authentic flavours of the South, a land endowed with an inherently generous nature.

A virtuoso of nutritional equilibrium, he reinvents a classic Provençal repertoire by drawing on high-quality products of irreproachable freshness selected in accordance with the highest standards. But his true strength is an inventive menu that manages to combine indulgence and balance.

Whether at noon or in the evening, an array of succulent dishes interpret the colours of Provence in a delightful Epicurean Mediterranean cuisine – exactly the type of culinary delights one would love to enjoy on a daily basis.

The restaurant at Villa Marie, Dolce Vita, is presented in a greenhouse version black and white with a coral tones. The place is stylish, dynamic and warm. An orange tree, a palm tree … a zest of liberty. The restaurant is one of the treasures of Villa Marie.

In an elegant and friendly atmosphere, the chef and his brigade adapt Southern accents in inventive new ways, modern and subtle, which puts the freshest ingredients in the spotlight.  On the plate, this translates to colours, flavours and fragrances that celebrate the Mediterranean. Fresh catches of the day, refreshing citrus fruits, seasonal vegetables bursting with sunshine and herbs awaken and delight your taste buds.

At lunchtime, delight in a moment of true indulgence, with uninterrupted views of the pale green pool and the sea. Beef heart tomatoes and basil served with veritable buffalo mozzarella, « Villa Marie » Pan Bagna sandwich and Lebanese-style, tabbouleh salad with quinoa, and to end on a sweet note, the Peach melba Villa style.

The gourmet restaurant’s secluded dining room offers a splendid view on Saint-Tropez’s bay. In total secrecy, our hosts can dream along as they admire beautiful landscapes that resemble works of art.

In a convivial setting, taking a seat at one of the small tables allows one to enjoy the gentle sea breeze while at the same time appreciating the air conditioning. Serenity and peace prevail in a warm and cosy atmosphere where time seems to come to a standstill.

The elegant, convivial and comfortable terrace is a favourite meeting place in the evenings and during market days onTuesdays and Saturdays. The faithful staff provides a personal and warm welcome which is much appreciated by the finest guests.

Loads of history here, with the sea and the La Ponche beach at your feet, but also a prime position in the heart of the old village of Saint-Tropez. Today La Ponche attracts great names such as Jack Nicholson as well as a number of famous French actors and film makers.

Cabane Bambou

 

This little heaven in Pampelonne needs no further introduction, totally enchanted with its access through a small bamboo trees forest, exotic fragrances. The place is entirely dedicated to shared times of pleasure and friendliness for lunch, toes in the sand or in the welcoming indoor room. Make the best of a nice “farniente” break under the sun. Open every day.

Le Caprice des Deux

 ” J’aime travailler les produits avec simplicité, comme un passeur de sens qui ajuste les couleurs et les saveurs.”

 

« Le Caprice des Deux » est l’histoire d’un frère et d’une soeur, qui ont une passion commune : l’Amour de la Cuisine et du Partage. Nous sommes Sonia et Stéphane Avelin.

En 1994, nous avons décidé de réunir toutes nos économies ainsi que celles de nos bienveillants grands-parents pour créer un restaurant à Saint-Tropez…l’enjeu était grand et c’est tout naturellement que le nom du restaurant fut trouvé : « Le Caprice des Deux » ! Car oui, nous le reconnaissons, c’était un véritable caprice!

Quelques mois après l’ouverture, le Prince de Lignac choisit Stéphane en tant que Chef pour son banquet d’anniversaire. Dès lors, tous les projecteurs se tournèrent vers nous, et les clients accoururent en nombre pour découvrir notre Cuisine…

Au fil des années, notre travail et notre amour de la Cuisine furent reconnus et récompensés.

Stéphane Avelin fut d’abord élu « Espoir de la Gastronomie » en 1995.

Puis, en 2014, l’Etat décerna à Stéphane ainsi qu’à notre restaurant le prestigieux titre de « Maître Restaurateur » pour la qualité de notre Cuisine et notre engagement et obsession à ne travailler que des produits frais et bruts, autrement dit, le « fait maison ».

En 2014, le célèbre guide Gault&Millau décerna également au restaurant une deuxième toque : une très honorable récompense dont nous sommes très fiers.

Notre restaurant célèbre en 2014 ses 20 ans. Vingt années de partage, de bonheur et d’Amour de la Cuisine…
